Fresh Asparagus Soup
A simple yet delicious asparagus soup recipe pureed till it's creamy smooth is a sure winner. This recipe serves 4.
You'll need:
- 4 bunches of fresh green asparagus – approx. 1.4 kg/3.1 lbs
- 1 large spring onion
- 1.5 l or 3.2 pts chicken stock or water
- 100 g or 3 fl oz. double or single cream
- 100g or 3 oz. butter
- salt
- pepper
Step 1
After rinsing the asparagus stalk with a cold tap water, break each asparagus at its natural point. Set aside asparagus tips.
Step 2
Put the woody parts into a pan and pour the chicken stock / water. Place on medium heat. Cover the pan with lid and allow to heat through.
Step 3
Slice asparagus tips and set aside.
Step 4
Slice stalks into 1.5 cm pieces.
Step 5
Slice spring onion bulb from stem. Chop the bulb and stem and slice it finely.
Step 6
Bring pan with stock to boil, lower heat, and simmer for 10 minutes.
Step 7
Drain the stock and discard the woody bits
Step 8
Melt the butter over low heat.
Step 9
Add asparagus stalks and chopped onions and stir well. Turn up the heat and stew for 5 minutes, stirring occasionally.
Step 10
Add stock and cook until asparagus is soft. Cover the pan with lid and bring to boil. When boiled, turn down the heat and simmer.
Step 11
Allow mixture to cool for a few minutes then blend well until velvety in texture.
Step 12
Return mixture to the pan and add asparagus tips. Stir. Add half of cream to the mixture and stir again. Season with salt and pepper. Simmer gently on low heat for 5 minutes.
