How To Make Fruit Desserts
This easy recipe makes 6 fruit desserts. Shall we start?
Ingredients for this easy fruit dessert:
- 100 ml or 1/3 cup plus 1 tbsp of cream (35% fat)
- 1/2 vanilla bean
- 15 grams (0.53 ounces) or 1 tbsp white sugar
- 50 grams (1.76 ounces) white chocolate
- additional 110 ml or 1/3 cup plus 2 tbsps of cream
Fresh Fruit Sauce
- 100 grams (3.53 ounces) strawberries
- 50 grams (1.76 ounces) raspberries
- 10 grams (0.35 ounces) or 2 tsps sugar
- 60 grams (2.12 ounces) or 2 tbsps plus 2 tsps unsalted butter
- 40 grams (1.41 ounces) or 2 tbsps pus 1 tsp icing sugar
- 5 grams (0.18 ounces) or 1 tsp ground almonds
- 1 egg yolk
- 100 grams (3.53 ounces) or 2/3 cup plain flour
Pour the cream and white sugar into the sauce bin. Add the vanilla bean with the cream and sugar.
Heat it over a high heat until the cream just starts to boil. Remove from the heat and pour through a sieve over the white chocolate.
Wait for a couple of minutes then stir until all the lumps of the chocolate are melted, smooth, and evenly mixed. Pour in the remaining cream and place the bowl in the freezer to chill for an hour.
While chilling, let's make the crisp biscuits:
Beat together the butter and icing sugar and then add the ground almond and egg yolk. Beat them altogether until it becomes smooth.
Using a spoon, mix in the flour until it's just combined. We don't want to mix it too much or it will be a tough pastry.
Place the mixture between two non-stick baking papers and use a baking pin to press and roll out the batter thinly.
Use a circle cutter and cut it into 6 circles.
Bake at 150 degrees Celsius (302 degrees Fahrenheit) for 15 minutes or until it turns golden.
To make the fresh sauce, you just need to place all the ingredients in a blender or food processor and blitz until it's liquid. Strain to sift all the remaining lumps of the blended fruit mixture.
Slice the strawberries and get the chilled cream mixture. Using an electric whisk, whisk the mixture. If it's still runny, continue whipping it. You can check if the consistency is good to go when you turn it off, lift it, and the cream looks like a soft paste. Place them all in a piping bag.
Add 20ml of fresh fruit sauce into the bottom of each glass.
Using a piping bag, add a generous amount of cream into each glass, cover with biscuits carefully, and then arrange the fresh fruits in pile.
Remember to instruct your guests to push down the fruits into the glass. And then they can get a spoonful of delicious Chantilly cream with the fresh fruits, crunchy biscuits, and tangy sauce altogether.
