Quick, delicious and as creative as you want it to be since you get to decide what kind of fruit to put in it. No mixing required! These single-serving DIY mason jar cakes are baked and served right in the jar itself. It is like a parfait style cake you have to layer, but much, much easier to make. Plus, it is in a mason jar. Who knew?

I have to warn you before you go and make this recipe, that you are going to end up with not one, but four, of these cakes. Single serve cakes that are perfect for one person to eat…. I put mine in the fridge after baking and ended up having one for breakfast, lunch, dinner and snack the next day. So be prepared to hide them from yourself if you need to.

If you have slightly damaged fruits, this recipe is also perfect to make use of them. All you have to do is discard the part you don't want. This recipe uses cherries and strawberries but you can also make use of whatever fruit is in season .(This is a great recipe for those overly brown bananas you hate to throw away.)
Mason Jar Cake Recipe:
- 1 1/2 cups pitted cherries
- 1 cup sliced strawberries
- 1/2 cup sugar
- 1/2 cup all-purpose flour
- 4 tbsp butter
- 1/2 tsp salt
- 3/4 cup heavy whipping cream
NOTE: This recipe calls for cherries and strawberries, but you can substitute any fruit you want. Bananas, peaches, blackberries, blueberries will all work great. Probably some other fruits, too. Let me know if you find some other cool combos in the comments below.
Supplies:
- baking dish
- mixing bowl
- 4 half pint mason jars
- dried beans (to line the dish when baking)
DIY Cake In A Jar Tutorial
Step 1
Preheat the oven to 350°F.
Step 2
In a small bowl, combine the strawberries & cherries then divide the fruits equally among 4 half-pint mason jars.
Step 3
Whisk together the sugar, flour, salt, and divide the mixture among the jars.
Step 4
Take 1/4 cup of the mixture per mason jar. Tap and shake each of the canning jar well to evenly distribute all the dry ingredients around the fruits.
Step 5
Top each jar with 1 tbsp of butter. Remember, the jars should not be filled all the way to the top.
Step 6
Fill the bottom of a baking dish with dried beans . You can use an 8-inch square one or a round baking dish for this recipe. This is to help ensure that the jars are steady while you’re moving the mason jars in and out of the oven. Take note that the jars should not be touching one another.
Step 7
Bake for 1 hour. The tops should be brown and bubbly and the cakes have already set by then. Remove the baking dish from the oven and allow them to cool on a rack for about 20 minutes.
Step 8
And there you have it! You have just made a scrumptious dessert in a jar with just as easy as putting all ingredients in it and baking!
Add some whipped cream on top of each cakes and serve straight from the jars. This recipe reminds me a lot of this simple fluffy cobbler my grandmother used to bake after we went and picked fresh blackberries with her. She served ice cream on that. I wonder if these would be good with ice cream? Makes me want to go blackberry picking soon, and then buy some ice cream. I think I may just be looking for an excuse to make more of them. Peaches, cake, ice cream. Blueberries, cake, whipping cream. Strawberries, cake, creme fraiche. What has happened to me?
By the way, these make great dessert ideas for buffets and parties, especially because you can make them ahead. The fact you can put a lid on them and easily refrigerate to store is a major selling point.
